Lynn's Bean & Rice Salad
15 oz can Black Beans, drained & rinsed
1 cup rice - cooked & cooled
1 cup frozen corn - charred
1/4 cup chopped red onion
3 scallions, finely chopped
2 cups halved cherry tomatoes
1 large clove of garlic, minced
1 T lime juice
3 T olive oil
1/2 t salt
1/4 t pepper
1/2 t sugar
cayenn or minced jalapenos to tase
cumin to taste
torn basil or cilantro leaves
Mix and refridgerate!
